1.5 cups of almond meal
0.5 cups of cornflour
0.3 cups of raw sugar
0.3 cups of desiccated coconut
0.25 cups of polenta or millet
1 tea spoon of baking soda mixed with 1 tea spoon white vinegar or apple cider
0.5 cup of coconut or rice bran oil
0.25 cups of sesame seeds (I used black sesame seeds, walnuts and pepitas - the same amount shown)
3 raw chicken eggs
1 lemon rind (I used cranberries - around 0.25 cups)
2 tea spoons of vanilla essence
flowers and berries to decorate
you can add syrup cooked from one lemon juice and 2 table spoons of raw sugar but I did not
add berry tea to this cake to serve with... I added strawberry tea.
the cake is delicious - the recipe is changed from what I saw online and it still works wonders!
