cooking Ejjen using as promised the recipe from the the book Yallateef! by #MarwaMakool @marwamakool
I am publishing my snaps step by step and the final photo.
ingredients (slightly changed for this recipe):
2 grated carrots
1 grated zucchini
1/4 small grated pumpkin
1 small onion
1 small grated cupsicum
1/2 bunch of chopped continental parsley (green leaves only)
1 handful of fresh mint
spices:
1 tbs garlic and herbs (buy at Oasis AU Bakery shop)
1 tsp mixed spice (baharat) (Oasis)
1 tsp Aleppa pepper (Oasis)
1 tsp fine black pepper
1 tsp sea salt (used no salt salt)
2 cups of self raising flour
3 fresh eggs
2 cups of filtered water
for frying:
rice bran oil (Oasis)
for dish decorations:
greek yogurt, pike nuts, parsley, mint leaves, red currant, green and calamate olives
the mixture of grated and hopped fresh vegetables and greens is placed in the bowl, added flour, eggs, water and spices
and some absolutely deliciously tender pancakes is your final product .
Misha gave it 10/10 when he just popped in today - so did I (Misha's comment: I can taste the eggs there... mmm.. almost vegetarian mmmm... I love it... mmm... its so blooooooody tasty mum... I come back after I finish work and eat the rest... - music for my ears) now will be Alex turn...
Easy to cook? mmmm.. you need lots of very yummy ingredients to buy , it is not simple but the end result is soooooooo rewarding and worth every minute you spend cooking.
